Have you ever heard of Meatless Monday? It is what it sounds like; being a vegetarian, once a week! I had a Meatless Monday today, and I thought I would share it with my IBS Sisters! Not only does going meatless one day per week reduce your carbon footprint, it also helps with digestion; something all Sisters could benefit from. Especially coming off of those weekend indulgences, Monday is the perfect day to go meatless! I was also able to eat dairy free, gluten free, AND follow the low-FODMAP diet. Take a look at these easily digestible meatless dishes, and let us know what you think! Are you going to go meatless next Monday?
For breakfast, I had a Green Goddess Smoothie. Check out the recipe in the Recipe section!
For snack, I had a banana with a tsp. of peanut butter.
For lunch, I had tofu (one pack) pan “fried” in 1 tbs. coconut oil, with half of an eggplant, one small squash, and steamed carrots. I just like to sprinkle different seasonings in the dishes to experiment. I added a little sea salt, pepper, rosemary, and oregano. I have learned that herbs are the way to go for a Sister to give our food full flavor! I made a big batch, and will be eating a meatless lunch for a few days! I also demonstrated pressing tofu here. When you press the water out, it cooks so much better!
For another snack, cantaloupe!
For dinner, I had a lot of fun making a crockpot soup. I added vegetable broth, water, 1 cup of brown rice, 1 cup of brown rice penne pasta, eggplant, squash, carrots, corn, green beans, spinach, kale, red peppers, green beans… you see where I’m going with this. Clean out your fridge! Think of any veggie you may have been craving and throw it in there! I cooked it on high for about 4 hours, it was so delicious. I had two bowls and was so full, and it’s guilt free! I also added a lot of herbs and spices, yum! Get creative, Sister! I also made a huge batch of this, so I may add some chicken tomorrow night for another dinner for the whole family to enjoy! Easy Peasy, how we like things on Mondays!
