Bacon Wrapped Avocado Salmon Bites!

Hey Sisters! I wanted to share with you a delicious appetizer for your next Holiday party, or even as a main dish! The smaller the salmon pieces are, the easier they stay “wrapped”. If you want to do a filet for dinner, just lay the bacon on top of the salmon and avocado, and wrap on the sides, and enjoy!

I started with melting some coconut oil in a pan on medium heat. The trick to salmon is to not overcook it. I threw some turkey bacon in there as well. As the pan was starting to get nice and hot, I squeezed half of a fresh lemon over the salmon.

image1I cooked the salmon for about 3-4 minutes on one side and then flipped it over, then also flipped the bacon. I then seasoned the salmon with rosemary, oregano, salt, and pepper. YUM! Use any spices you like!


I took the salmon off and let the bacon continue to cook until it was a little crispy. Mmmm Bacon! You can use pork bacon too if youΒ prefer that, this is just a healthier option.


I set the salmon aside, and then took the bacon off and laid it on the container that I was storing the bites in (I was making this for today’s lunch). I laid the salmon pieces on top, and then the guacamole. (I usually use avocado slices, but we had some dairy free, homemade gauc at home that I needed to use before it went bad, and it was delicious!)


I folded the bacon over on each side and flipped over to make a bite, and Wa-La!

image5I stored these in the fridge over night and nooked them in the microwave for 30 seconds, and they were so YUMMY! They are obviously better if you can make them and eat right away πŸ™‚ 1/8 or less of an avocado is actually low-FODMAP, so enjoy this dairy free, gluten free, low-FODMAP dish for any occasion!
