Meatless isn’t just for Monday’s!

My last post was fish tacos, so you’ll see that I’m all into this corn tortilla thing! I make my husband tacos almost every night, lol, so I was trying to keep it healthy & IBS friendly for myself! I came up with this veggie taco πŸ™‚


All I did was sautΓ© some spinach, Bella mushrooms, and carrots in a tablespoon of coconut oil, and threw the corn shell in the pan to heat just as I did with the fish tacos, and topped with avocado! I also added a little salsa for extra flavor.


If I did this again, I would use cooked carrots to sautΓ©, the crispy carrot was good, but a little too hard. If they were cooked and then sautΓ©ed with the other veggies, it would be perfecto! I also found these vegetable chips at Kroger that were spicy. I think I like the Kale/Quinoa crisps better to dip in salsa, but the veggie chips weren’t bad!




Dinner doesn’t have to be boring to be healthy! Enjoy Sisters!!
