Pumpkin Oatmeal Almond Butter Chia Cookies

A few weeks ago, Starbucks launched the Pumpkin Spice Lattebl for the year. It’s like the unofficial start to Fall! With fall just a few days away, I thought I would experiment in the kitchen this morning with the a can of pumpkin on my shelf & other ingredients I already had! These pumpkin oatmeal almond butter chia cookies sound like a mouthful, & that’s because they are! A mouthful of goodness!

Here’s what you need:

2-4 Tbs. of chia seeds (I used 2, but could have definitely used more. & why not?! They’re super healthy)

  
1/2 cup of almond butter

  
1/4 cup of Truvia (or any Stevia brand)

  
1/2 cup of quick oats

 
1/2 cup of almond milk

 
1/4 cup of egg whites (optional)

 
2/3 cup of can pumpkin (you can add more or less depending on how “pumpkiny” you want it!)

  

1 Tbs. of coconut oil (optional)

  

A dash of sea salt and cinnamon, & a splash of vanilla extract!

 
Mix it all together

  

& spoon on a greased cookie sheet! I made six big cookies due to the consistency. If you wanted to make 12 small cookies, I would suggest adding an extra 1/2 cup of oats!

   

 

Bake in the oven for 15 minutes at 350 degrees, and you have a yummy, fall, healthy, cookie! I cooled them on a cookie rack & stored in an air tight container after cooling.
