Almond Joy Protein Bites

Hi Sisters! Happy Friday Eve!! If you’re looking for an easy, fun, no-bake, healthy, IBS friendly recipe to make this weekend, check out these Almond Joy Protein Bites! These bites are dairy, gluten, sugar free, and absolutely delicious! I’m a sucker for a protein bar, but it’s hard to find one that doesn’t contain dairy, have a ton of carbs, or a lot of sugar. These small bites pack a big flavor protein punch, with only [approximately] 77 calories each! So, let’s get to the goods!

Dry Ingredients:


6 scoops of raw vegan protein powder (I used chocolate)

6 tablespoons of coconut flour

6-8 tablespoons of stevia (depending on your sweet tooth)

6 tablespoons of shredded coconut, unsweetened

2 tablespoons of mini dark chocolate chips (optional, I didn’t use them in this batch)

Wet Ingredients:


2 tablespoons of melted coconut oil

1 tablespoon of vanilla extract

1/2 cup of unsweetened almond milk


2 tablespoons of shredded coconut, unsweetened


Mix all dry ingredients together in a medium sized mixing bowl.


Add in the wet ingredients to the dry ingredients and mix.



Line a baking sheet with parchment paper, and roll the “dough” (We all love rollin’ in the dough!) into balls from a heaping tablespoon. Sprinkle the remaining shredded coconut from the topping ingredients on top of the bites. Place in the fridge over night. Wake up, and have one (or a few!) with your cup of coffee, or for a pre-workout snack! I also love to grab one of these when I’m craving something sweet. Cheat clean! Store in tupperware containers or ziplock bags. Freezable, too!
