Hi Sisters! Happy HUMP DAY! Yesterday, I shared myΒ Quinoa Breakfast Bowl, and I mentioned that I made a whole box of quinoa. So what was I to do with all of this quinoa? I ate it for breakfast, lunch, dinner, and dessert! I also had one [or two] of these protein packed cookies for breakfast! They are also delicious, dairy free, gluten free, vegan, low-fodmap, & IBS friendly! I will also share my lunch and dinner quinoa dishes with you this week, but here are the KOOKIEZ!

I started out with 3 cups of quinoa. I spooned in some almond butter, and ended up having to add a little more almond butter after to help the KOOKIEZ stick.

I like to call this type of cookie that I make (usually with oatmeal) a dump cookie. That’s just because I don’t really measure out or plan all of the ingredients, I just kind of “dump” it in,Β trial and error with consistency, and use whatever ingredients I already have. So, I added in 2 scoops of vegan vanilla protein powder, 2 tablespoons of chia seeds, 3 tablespoons of coconut flakes, a dash or two of himalayan sea salt, and a few dashes of cinnamon.

I added in 2/3 cup of almond milk, and then dumped in some chopped walnuts that I have, and drizzled with agave syrup. If you want a sweeter cookie, I would also add some stevia or coconut sugar. You can make them as sweet as you like! Mixed it all up and….

WAH-LA! I dumped the dump KEEN-wah Kookiez mix on oven safe parchment paper, and popped them in the oven for about 20 minutes at 350 degrees. I noticed when the timer went off that they weren’t quite done, so I cut the oven off and let them sit in there until I went to bed. I put them in a container, and now I have a quick go to breakfast, dessert, and snack option! I will say, when I pulled these out of the oven last night and had a taste, they were REALLY warm and CRUNCHY and so delightful. Don’t get me wrong, they were still super delicious this morning, but they were the BEST right after pulling them out of the oven. With all the protein in these kookiez, I am feeling pleasantly full, and can’t wait for my next kookie!
