Happy Saturday, Sisters! I am headed to the mountains for a horse jumping show with Olympic level riders! It was my cousin’s birthday last week, and we’re going there to celebrate! She is the biggest horse lover I know!! June 11th, try something new! This is new for me! πŸ™‚

As promised, I wanted to share a few more of my quinoa recipes since I ate it for every meal last week πŸ™‚ Quinoa is an IBS superfood, so that’s one good reason to add it to your diet. You can check them all out here:Β Well-Being Secrets, Health Benefits of Quinoa!Β Here was one of my lunches, which was actually enough for two lunches! I made chicken hibachi with summer squash and carrots, and subbed the quinoa for rice. I used a little soy sauce, and it was delicious!

The main recipe I wanted to share with you is this Quinoa Sweet Potato! Something else in the “try something new” category for me! This and theΒ KEEN-wah KookiezΒ were definitely my favorites of the week! It can be eaten for lunch, dinner, and even breakfast if your heart desires! πŸ™‚

They had local grown sweet potatoes on sale last week, so I made sure to scoop up a few! I washed the sweet potato and microwaved it for 5 minutes. I even forgot to fork holes in it and it didn’t explode. WIN! I then used about a tablespoon of coconut oil just as I would butter, right after cutting the potato while it’s still hot. I sprinkled a little himalayan pink sea salt, and then stuffed it with quinoa. I just spooned it in until it was full, didn’t really measure it out. It also depends on how big your spud is! I then sprinkled with cinnamon, and topped with these candied pecans.

This potato is packed with health benefits, low-fodmap, gluten free and dairy free! It’s also DELISH and so easy to make! Give it a try and let me know what you think!
