Spaghetti Squash Pasta

Happy Friday, Sisters! I wanted to share with you a little dish I made this week for lunch & dinner! Low-carb, low-fodmap, gluten-free, dairy-free, ibs friendly, and delicious! Spaghetti squash pasta!!

I was always a little intimidated to buy spaghetti squash because I just didn’t know how to cook it. Then, my Mom told me that you can just pop it in the microwave! I washed the squash, made a few slits on each side, set it in about an inch of water in a microwave safe dish, and cooked it for 12 minutes in the microwave!

In the meantime, I was cooking up some chicken tenders and zucchini and yellow squash in coconut oil on the stove.

I like my veggies a little burnt πŸ™‚

BEEP! BEEP! The spaghetti squash is ready!

I cut it in half and then used a fork to pull out the “spaghetti noodles!”

I honestly bought this squash to make tomato sauce “pasta”, but when I went to make it, I didn’t have any spaghetti sauce like I thought I did! So I improvised πŸ™‚ I had some tahini goddess dressing that was dairy-free/gluten-free, so drizzled that on top and squeezed lemon on top. I was able to make to dishes with these ingredients, lunch & dinner!

& that’s it! You have an easy, low-carb, high-protein, low-fodmap, gluten-free, dairy-free, ibs friendly, and delicious, lunch and dinner, spaghetti squash pasta!!
